Hey guys! I am gearing up and getting ready for our annual ski trip. This year we’re headed to Snowshoe, WV, the ski resort we went to last year and had a great time at! I’ve gotta get my ski stuff washed and packed away as well as head out and get some food for the next 5 days! Crock Pot Chicken Pot Pie and Chili is on the menu! I hope I can appease these boys’ appetite!
Today I am going to share with you my absolutely 100% fool proof and delicious protein pancake recipe. I make these about 4-5 times a week and top with lots of different things depending on my macros for the day! They are delicious!
The Easiest Protein Pancakes:
1/2 cup 0% Fat Greek Yogurt
1/2 cup Liquid Egg Whites
1 scoop (31g) Optimum Nutrition Vanilla Whey Protein
15 grams all purpose flour
1 packet of Splenda
1 tsp of vanilla extract
1 tsp baking soda
1. Mix all ingredients together with whisk or spoon.
2. On medium heat, cook pancakes.
3. Top with various toppings!
Serving size: about 8 pancakes (but the whole batch!)
Fat: 1.3 grams
Carbs: 18.6 grams
Fiber: 1.8 grams
Protein: 52.2 grams

So there you have it. It really is that easy to make these pancakes and they turn out perfect for me every time. The important thing is to make sure you are cooking it on medium heat so not to burn them! I usually get around 8-10 pancakes depending on how big I make them.
I use sugar free Syrup like Carey’s to keep my carb content low and usually top them with peanut butter and fruit, or sometimes with chocolate chips and peanut butter, or just straight syrup and peanut butter.
Honestly, the options are endless. I love these because they are low on carbs and high on protein…but they still taste JUST LIKE PANCAKES! Try them out and let me know how it goes! I guarantee you will not be disappointed!
