So I am totally not a foodie, I am not even a great cook…but I am a great baker. I rarely share recipes on here, but every now and then I think I’m going to start!
As part of our new goals for 2013, to being more organized and *ahem* waste less money, we decided on two meals for this week. The first one was this Spinach, Chicken, and Noodle casserole.
At first I was a little suspicious about how good this would taste, but I am super happy with it!
I got the recipe from Pinterest originally , but it actually came from Real Simple online…so you know it has to be easy!
And the instructions…
6 tbsp unsalted butter
1/4 cup flour
4 cups whole milk (I used 2%…WHOLE MILK?! REALLY?)
1 cup sour cream
12 ounces of egg noodles
4 slices of bread (or breadcrumbs)
2 cups chicken
10 ounces of spinach
1 chicken bouline cube
Minced garlic to taste
1. Melt 4 tbsp butter in a sauce pain. Add flour and stir constantly for 1-2 minutes until “fluffy”. Add milk slowly and cook for 7-10 minutes until “thicker”. Add salt, pepper, chicken bouline and garlic to taste. Add sour cream and stir (obviously).
2. Cook egg noodles as on package.
3. Cook/prepare chicken and spinach if either frozen or uncooked.
4. Combine all ingredients in a large casserole dish. Cover with breadcrumbs and 2 tbsp of remaining butter (melted in microwave) and bake for 15-20 minutes.

As you can see, some of my ingredients and instructions were a little different than the website. I read through some of the comments about the casserole and they said the “sauce” was lacking flavor so I put in some chicken bouline and garlic, which made it amazing! I used frozen chicken and put in about 12 ounces total for the whole casserole. I actually also used a 10 ounce package of spinach because the man likes spinach and they only come in 10 ounce frozen packages.
It was really simple and came out great. It’s been three days and I’m still eating left overs after heating it up in the microwave! This will definitely be a keeper!
